Have a 50 pint dehumidifier that freezes up on the line and eventually onto the coil, some type of sensor located in the freezing area, any ideas before installing access fittings to refrigerant system

Sealed system issues are hardly worth fooling with on these because it is simply not economical. The evaporator coil probably has a tiny leak and the only way to fix this is to replace it. Adding freon to a leaking system is a very temporary and expensive fix. Just get a new unit.
