Have you power cycled the refrigerator yet?

Unplug the refrigerator for 5 full minutes and then plug it back in. If it enters the demo mode then try the unlock sequence again. I will pull the tech manual and double check to make sure you are hitting the proper buttons.
I will need the model number from you to get the manual you need.

It is on the sticker inside the refrigerator compartment.

Are those the buttons you pushed?
I pressed the power saver and power freezer buttons for 8 seconds. let me try that.
it appeared to have worked, but it shifted back into demo mode
Try power cycling the unit and see if that fixes the issue. It sounds like the control board is having a fault of some sort and keeps pushing it back into demo.

If it continues to do that I would replace the control board on the unit. Power cycling might work though so try it first. The control board will set back to factory setting and erase any confusion caused by power surges or outages.

what ive seen in forums is that it should be 1-2" away from the wall/ceiling or cabinets, what would you recomend
That is just about right. It just needs a little room to breathe so it can cycle the hot air off of the coils and compressor.
