Is this the first time you have reset the temp on this unit?
I asked because some of the GE units allow you to set the temp and then it reverts to the actual temp on the display. Have you tried dropping the temp 1 notch and waiting a few hours to see if the temp on the display changed?
no we have not
Try that first and see if it works for you. If not, unplug the unit for 10 minutes and then plug it back in. Once the unit is running, change the temp and see if it stays. The 'hard reset' of the board may take care of the issue.
If neither of those work then you will likely have to replace the display board on the front of the dispenser.
