this means your not getting enough water , does this have a tap valve water supply ?

It was installed using a saddle valve tapped into a 1/2" copper pipe

okay, you need to shut the water of to the house remove the saddle valve and take a 1/8" bit and drill the pipe , these saddle valves (piercing) don't make a big enough hole is the pipe and they start to not let enough water through to make ice correctly, this will fix your issue, thanks Bryan
