Hi, convection uses a fan while it is cooking where standard does not. The fan moves the heat around the oven making a more even cooking. Convection is great when you are baking on more than one rack. It alos helps brown food better and locks in the juices. Convection also cuts down on cooking time.
I have a G.E and am happy with it, but they are all pretty close, Whirlpool, Maytag, Frigidaire. It all depends on how much you want to spend.
2-300 is what i want to spend. any suggestions on a good value one.
